Halibut Grilled
(Serves 2)

Ingredients:
1 cup all purpose flour
black pepper to taste
salt to taste
egg wash (3 eggs + 2 cups milk, mixed well)
2 tablespoons butter
two 8-ounce halibut filets
garnish: 2 lemon wedges

Method:
Mix together the flour, black pepper, and salt. Set aside.

Place the butter in a sauté pan. While the butter is melting, dip the filets into the egg wash and then dredge in the seasoned flour. Cook the filets 4-6 minutes on each side, or until done.

To test for doneness, using a paring knife, make a small slit in the filets. If the flesh is translucent, continuing cooking. The filets are done with the flesh becomes opaque.

Serve with a wedge of lemon and Market Street Tartar Sauce.
