Salmon Barbecued Serves Two |
| Ingredients: two 6-8 ounce salmon filets (any kind) cracked black pepper to taste salt to taste 2 tablespoons olive oil additional olive oil for the grill Method: Season the salmon filets with cracked black pepper and salt. Place the two tablespoons of olive oil in a sauté pan over medium-high heat. When the pan is hot, sear the filets for 2-3 seconds on each side. (This seals in the flavor and moisture and prevents the filets from sticking to the barbecue grill.) Heat grill to medium-high. Be sure that the grill is very clean and sufficiently hot so that salmon does not stick. Brushing the grill lightly with oil will prevent the filets from sticking. Place the filets on the grill and cook 3-4 minutes. Turn a quarter of a turn and cook an additional 3 minutes. Turn the filets over and cook for 3-5 minutes, or until done.
